Would that be at a cost? And how easy is it to turn on/off and to change the number. Ideally we need to be able to change it on the phone

Call Forwarding is only available for Postpay connections, not prepay connections.
You can configure this on the phone itself in the call forwarding settings, or you can use GSM codes to configure the same. if you are on postpay.
The cost is the same as the per minute rate for you to call the number the call is being forwarded to. (EG If you have included minutes to NZ mobiles / landlines, and you are forwarding the call to an NZ mobile / landline, it will be free and deducted from those minutes entitlements).

We are a post pay/business customer. This phone will be used as a callout phone, so needing to divert calls to different phones each weekend.
