I have spent 3 hours on 2 calls trying to iron out my first bill with mobile/fibre/sky and thought I'd sorted out a $176 overcharge with a credit. I paid the new amount. This was confirmed on the phone. I am still getting threatening messages to pay the whole bill or get charged late charges.

Why wouldn't your system recognise the credit given?
