Are you telling me there will always be a significant delay or do you mean that it might take some time after the port before everything works properly?

The latter. It can take some time for things elsewhere to update once you've ported - 'things' being the SMS routing tables/hubs that state which carrier your number is assigned to. This is completely outside of VF's control.
(If the SMS was arriving at VF's network, it'd get sent to you (except in the event of some major issue).)

Whilst I don't work for VF and they may say quite differently, I'd suggest you just wait this out until the routing tables update.

@Sam is exactly right.
You'd be best to contact google and/or any other parties you're having trouble with, so they can log a ticket with their SMS vendor, otherwise it could potentially be a long time till they update their routing for your number.
